Elio is a small hawker stall with a short menu: bone broth noodles, dry tossed noodles, wok-fried rice and handmade dumplings. Every takeaway leaves wrapped in waxed paper, the way our family has always packed it, so the noodles stay springy on the way home.

What happens before the shutters go up

There is no shortcut stock in the pot. The broth follows the same four steps every night, which is why the stall rests on Mondays.

  1. Blanch the bones

    Evening, before closing

    Pork bones are blanched and rinsed clean so the finished broth stays clear, not cloudy.

  2. Simmer overnight

    Low heat, lid ajar

    Bones, dried anchovy, soybeans and charred onion sit at a bare simmer through the night.

  3. Skim & season

    First light

    The pot is skimmed, strained and seasoned by taste. Only then does the stall open.

  4. Wrap in paper

    Every takeaway

    Noodles are wrapped dry in waxed paper and broth goes in its own tub, so nothing turns soft on the way home.

How ordering works here

It's a queue-and-pay stall. Knowing these four things makes the line move quickly for everyone.

  • Chope a seat firstAt busy times, find a table before you join the queue, then order for the whole table at once.
  • Say soup or dry, then add-onsFor example, “dry noodles, extra dumplings, less chilli”. We repeat the order back before cooking.
  • Pay when you orderCash and the centre's cashless QR are both accepted at the counter.

Asked most at the stall

What time does the special pot usually sell out?

It depends on the day and the weather. Weekend pots go fastest, so come before lunch if that's the bowl you want. The strip at the top of this page shows which pot is on today.

Is there anything vegetarian?

Yes. The greens and tofu noodles are made in a separate vegetable stock pot, and fried rice can be made without pork floss or lard. Tell us at the counter so we use the clean wok.

Which dishes contain shellfish or nuts?

The dumplings and the weekend seafood soup contain prawn. Our chilli oil contains sesame but no peanuts. Please mention any allergy when you order and we will talk you through the options.

Can I bring my own container?

Please do. Hand it over when you order and we'll fill it instead of using paper and a tub.

How far will the takeaway travel?

Because noodles and broth are packed separately, they keep well for about half an hour. Pour the hot broth over the noodles just before eating.

Can you cook less spicy or less salty?

Yes. Chilli is always added last, so any bowl can be mild. We can also go lighter on the sauce for dry noodles or on seasoning for children's bowls.

We cook fried rice, dry noodles and dumplings in trays for family gatherings and office lunches, for collection at the stall. Send the details below at least three days ahead and we'll reply to confirm what we can cook.

No payment online. We confirm by email and you pay at collection.
